Glenallachie 12 Year Old Sauternes Finish
To craft The Glenallachie Wine Series, the whisky is expertly matured in American Oak Ex-Bourbon Barrels. Subsequently, the whisky underwent additional maturation for almost 2 years in Wine Barriques skilfully sourced by Master Distiller Billy Walker, imparting a distinctive twist onto the classic Glenallachie Spirit.
Each of the Wine Finishes has its own unique character and flavour profile influenced by the oak. Factors such as the oak species, level of toasting, and coopering of the cask each leave a unique mark on the slumbering spirit.
This golden malt gets its elegant stone fruit, zesty flavours from Sauternes Barriques made from French Oak, after a medium level of toasting. Sauternes is a dessert wine originating from the Bordeaux region of South West France, using the 'noble rot' to sweeten the wine. Delivering gentle notes of fresh fruit and honey, these Barriques were carefully sourced and then bottled at their optimum, when the characteristics of the distillery and wood were in perfect balance
